Chia Seed Pudding Neapolitan Style
 
 
Chia seeds seem to have taken the food world by storm and it is no wonder why. Chia seeds are tiny nutritional powerhouses. They’re also naturally gluten free and vegan friendly. Now meet Katie Doyle of PersonallyPaleo.com. One of Katie’s personal favorites for using chia seeds is in puddings, so she has shared this recipe below today for us all. Thank you Katie!

Ingredients
  • Vanilla Layer Ingredients
  • ½ cup non-dairy milk
  • 2 tablespoons chia seeds
  • ¼ teaspoon vanilla
  • OPTIONAL: 1-2 teaspoons honey or maple syrup
  • Chocolate Layer Ingredients
  • ½ cup non-dairy milk
  • 2 tablespoons chia seeds
  • 1 tablespoon cocoa powder
  • 1 tablespoon honey or maple syrup
  • Strawberry Layer Ingredients
  • ¼ cup + 2 tablespoons non-dairy milk
  • 2 tablespoons chia seeds
  • 6 fresh or frozen strawberries, halved
  • 1 tablespoon honey or maple syrup
Instructions
  1. In 3 separate bowls, make the individual chia seed layers.
  2. Chill for at least 6 hours, up to overnight.
  3. When ready, layer for serving in 2 separate containers.
  4. Eat immediately or store covered in refrigerator for up to 5 days.
  5. Enjoy!
