Memorial Day Pesto Recipe
This delicious and healthy plant-based pesto recipe from Organic Gemini is very easy to make and is bursting with flavor. The best part is that it contains 2 unique ingredients: TigerNuts and TigerNut oil. TigerNuts are an incredible superfood that liven this paleo recipe up perfectly. Enjoy the pesto on a sandwich, tossed with zoodles, spread over veggies or fish or meat, or any way your heart desires!
  • 1 large handful of basil
  • ½ cup hydrated TigerNuts (soaked overnight)
  • 1 clove garlic
  • 2 tablespoons TigerNut oil
  • Sea salt, to taste
  1. Place all ingredients into a food processor.
  2. Pulse until coarsely chopped.
  3. Add more oil and salt if desired.
  4. Enjoy!
