Paleo Chicken Salad with a Crunch

I get tired of the same old chicken salad. I always have leftover chicken in my kitchen as it is just so darned easy to bake, roast or boil. So, why not make extra?! I also love flavors, texture and seasoning, therefore my paleo chicken salad with a crunch recipe was born – it is truly an unusual way to make use of chicken with a unique twist.



  • 2 cups chopped cooked chicken (white or dark meat)
  • ½ medium Spanish onion, sliced and chopped into irregular pieces
  • ½ cup raw pepitas
  • ½ cup fresh cilantro, chopped
  • 2 teaspoons fresh ground pepper
  • ¼ teaspoon sea salt
  • 1/3 cup homemade mayonnaise
  • Optional: 1 teaspoon mesquite powder


  1. Mix all ingredients together in a bowl.
  2. Place the bowl in the refrigerator to chill.
  3. Once chilled, salt to taste.
  4. Serve on a bed of greens, or with sweet potato chips or use in a sandwich with paleo bread.
  5. Enjoy!
