Everyone, no matter if they’re on the paleo diet or not, needs some comfort food every now and then. If your paleo diet happens to not include potatoes, this recipe is probably right up your alley.
- 4 ½ cups cauliflower
- OPTIONAL: ¾ cup cashews, soaked for 4 hours
- 2 tablespoons olive oil
- 1 ½ teaspoons salt
- 1 tablespoon lemon juice
- 1 medium garlic clove
- Blend all ingredients together. If you’re using a VitaMix blender, blend fast and long enough to heat up.
