St. Patrick’s Day Avocado Dressing

This tasty dressing contains avocado, which is chockful of heart-healthy fat. Combined with the various other ingredients called for in this recipe, well your taste buds will be dancing. Interestingly enough avocado is actually a fruit! This delicious “fruit” is unique in that it contains both monounsaturated and polyunsaturated fats. These being the best quality of fats that you can consume.



  • ½ an avocado
  • Small handful of cilantro
  • Pinch of sea salt
  • ½ garlic clove
  • ½ serrano pepper
  • ¼ cup plain Organic Gemini horchata
  • ¼ cucumber


  1. Place all ingredients in an immersion blender or a mixer.
  2. Mix until well incorporated.
  3. IF desired, add more salt to taste.
  4. Enjoy!
