Chocolate chip cookies are one of those recipes you want to always have on hand. Easy to make from scratch and as long as you have basic baking ingredients and chocolate, you shouldn’t have to go shopping for any ingredients. I like coming up with new and different cookie recipes. When I was given tiger nut flour from Organic Gemini, I knew I wanted to find a way to incorporate it into a dessert. That is how, after much testing, I came up with this chocolate chip cookie with tiger nut flour.
Tigernut flour has a boat load of health benefits. It doesn’t have a whole lot of flavor so it is good to use for cookies as it won’t overpower the other flavors. I am into creating things that not only taste good but are also packed with nutrition. These definitely are nutritious! Since it is almost Lincoln’s Birthday, I would like to dedicate these to him. I would like to think he would enjoy their flavor and that they would fuel him day to day with his presidential tasks.
You can pre-make this recipe and freeze the dough for later use too. Cookies on the fly! Be sure to check out my other paleo chocolate chip cookie recipes as well, and my eBook featuring delicious treats and decadent delights.
Also, for all my PaleOmazing readers, Organic Gemini is offering a 15% off discount off the wonderful products on their site: www.OrganicGemini.com. You simply use coupon code “PaleoVegan” at checkout. This code is good now and for as long as you are reading this on my site. A terrific deal!Print
