Looking for a delicious plant-based dressing for Memorial Day?  I am sharing a very easy and very special Memorial Day Pesto recipe just for you!  But guess what?  I am terribly excited to introduce you to two other healthy ingredients to make this pesto with. This delicious paleo recipe is made with ingredients that are easy to find and you may very well already have them in your kitchen. So read on and let’s get to it.

TigerNuts and TigerNut Oil – If you are not familiar with TigerNuts yet, they are not actually nuts but small root vegetables.  Around 2 million years ago in the heart of Africa, our paleo ancestors relied heavily upon this super-root, making up to 80% of their diet.  TigerNuts are impressive since they are gluten-free, dairy-free, nut-free, grain-free, vegan and raw!  Plus, they are very high in prebiotic fiber, which resists digestion and helps our bodies to naturally develop probiotic bacteria, ensuring a strong immune system and eliminating various causes of fatigue, regulating body temperature, and preventing the onset of most modern diseases. This delicious and healthy plant-based pesto recipe from Organic Gemini is very easy to make and is bursting with flavor. The best part is that it contains 2 unique ingredients: TigerNuts and TigerNut oil. TigerNuts are an incredible superfood that liven this paleo recipe up perfectly. Enjoy the pesto on a sandwich, tossed with zoodles, spread over veggies or fish or meat, or any way your heart desires!


  • 1 large handful of basil
  • ½ cup hydrated TigerNuts (soaked overnight)
  • 1 clove garlic
  • 2 tablespoons TigerNut oil
  • Sea salt, to taste


  1. Place all ingredients into a food processor.
  2. Pulse until coarsely chopped.
  3. Add more oil and salt if desired.
  4. Enjoy!
